Pistachio Crusted Salmon Fillets

Yields: 4 servings



  1. Preheat oven to 350 degrees.
  2. Mix the Dijon mustard and tarragon in a bowl. Brush salmon fillets with mustard mix.
  3. Place pistachios in a food processor to chop. Place pistachios on a plate and press fillets, mustard side down, into them.
  4. Bake the fillets for 12 to 15 minutes, until fish flakes. Sprinkle with red-pepper flakes and serve.
